Orange Cranberry Nut Bread

Dry Ingredients 
  • 2 cups all-purpose flour Ensure to measure correctly for best results.
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
Wet Ingredients
  • 1/2 cup orange juice 
  • 1/4 cup vegetable oil
  • 2 large eggs
  • Zest of 1 orange
Add ins
  • 1 cup of whole or halved cranberries and 3/4 cup of chopped walnuts.
Preparation 
  1. Preheat your oven to 350°F (175°C) and prepare  a 9×5 inch loaf pan with cooking spray.
  2. In a large mixing bowl, combine the all-purpose flour, sugar, baking powder, baking soda, and salt.
  3. In a separate bowl, whisk together the orange juice, vegetable oil, eggs, and orange zest until well blended.
  4. Pour the wet mixture into the dry ingredients and stir gently until just combined. Fold in the cranberries and chopped walnuts.
Baking
  1. Transfer the batter to the prepared loaf pan and spread it evenly.
  2. Bake for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean.
  3. Allow the bread to cool in the pan for about 10 minutes, then remove and place on a wire rack.
