Dry Ingredients
- 2 cups all-purpose flour Ensure to measure correctly for best results.
- 1 cup granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
Wet Ingredients
- 1/2 cup orange juice
- 1/4 cup vegetable oil
- 2 large eggs
- Zest of 1 orange
Add ins
- 1 cup of whole or halved cranberries and 3/4 cup of chopped walnuts.
Preparation
- Preheat your oven to 350°F (175°C) and prepare a 9×5 inch loaf pan with cooking spray.
- In a large mixing bowl, combine the all-purpose flour, sugar, baking powder, baking soda, and salt.
- In a separate bowl, whisk together the orange juice, vegetable oil, eggs, and orange zest until well blended.
- Pour the wet mixture into the dry ingredients and stir gently until just combined. Fold in the cranberries and chopped walnuts.
Baking
- Transfer the batter to the prepared loaf pan and spread it evenly.
- Bake for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool in the pan for about 10 minutes, then remove and place on a wire rack.
