1 Tbsp. grated onion
1 can chicken soup
1 cup sour cream (or yogurt)
1 large carrot (grated)
Salt and Pepper to taste
Herb flavored bread crumbs
Butter
Mash cooked, drained squash, add onion, sour cream, carrots, salt and pepper. Butter a casserole dish, sprinkle a layer of crumbs on the bottom.
Add squash mixture.
Cover with crumbs and generous dots of butter.
Cook for 30 minutes at 350 degrees or until golden brown.
